Olives & olive oil, the landscape of Sparta and Laconia in general, is inextricably linked to the olive tree, which has been cultivated in the area since ancient times and still offers its precious fruits, delicious edible olives and the finest olive oil. The microclimate and soil of Laconia are suitable for the cultivation of many varieties of olives and the production of excellent olive oil. The local virgin olive oil produced mainly from the varieties "Athinolia", "Koutsourolia" and "Koronaiki", is the most important product of Sparta. The Laconian olive trees also produce fine olives of the "Kalamon" variety as well as green olives. Note that most of the olive oil production in the area is characterized as extra virgin, which is considered the best category in the world.

Oranges, the orange groves of Sparta embrace the valley of Evrotas and fill the air with their characteristic smell during springtime. The local oranges are known for their quality all over the world, as the prefecture of Laconia is one of the largest producers of oranges in Greece. Orange is also widely used in the local cuisine, in salads, sausages, pies, stews, sweets and cookies. Orange is also a famous local dessert and makes delicious jam.

Wine, vineyards have been cultivated in the area since ancient times thanks to the rich soil that alternates from plains to hills and mountainous areas. Winemaking is an important part of the local economy, although it is not a widely marketed product. Nevertheless, today, with organic vineyards constantly gaining ground, several varieties of wines are produced with remarkable distinctions. Typical varieties of the area are Kidonitsa and Mavroudi, but there are several others, such as Roditis, Athiri and Agiorgitiko. The wines of the area are characterized as of Protected Geographical Indication.

Honey, the pure honey of the area is also famous and is made from thyme, flowers and conifers, sage, orange and aromatic herbs from the slopes of Taygetos and Parnon. Taste it with yogurt, pancakes or just a slice of good bread and enjoy its rich taste and aroma.

Syglino & sausages, filled with orange peels have a prominent place among the local products. Syglino is salted pork that is preserved in its fat. Ancient Spartans used to preserve meat this way for long periods of time. Syglino consists of large pieces of pork that are smoked with local aromatic herbs, then boiled in water together with oranges and placed in containers covered with olive oil. It is also eaten without being cooked, but we suggest you combine it with fried eggs and potatoes. Do not forget to taste the local sausages, which are prepared with minced pork, wine, garlic and spices and have a special taste due to the orange peel they contain.

Pasta, enjoy the local pasta prepared with pure materials of the Laconian land. In addition to lasagna and trachana, you will also find wholemeal pasta made made with fresh milk and eggs. Enjoy them with mizithra, a delicious local grated cheese.
